Autumn is officially here!! To get into the autumnal, fade into you, oversized sweaters spirit I made these cookies that taste like September afternoons.
Little golden cookies filled with cinnamon apples, honey and maple syrup. ♡ ‧₊˚

INGREDIENTS.
For the cookies ♡
𝜗ৎ 3 tablespoon honey
𝜗ৎ3 tablespoon maple syrup
𝜗ৎ Cinnamon, to taste
𝜗ৎ A pinch of salt
𝜗ৎ 1 tablespoon oat milk
𝜗ৎ About 2 tablespoon maple syrup
𝜗ৎ 1 tablespoon honey
𝜗ৎ Cinnamon, to taste
𝜗ৎ A splash of water
METHOD.
1. Make the dough.
Add the butter, honey, maple syrup, flour, cinnamon, salt and oat milk to a bowl. Mix everything together until you have a soft cookie dough.
If your kitchen already smells like cinnamon, you’re doing it right.
2. Give her a little rest.
Pop the dough in the freezer for 12 minutes, or refrigerate it for about 30 minutes.
This is the perfect amount of time to make tea, put on a playlist and pretend you’re in a Nancy Meyers movie. <3
3. Make the apple filling.
Finely chop your apples and add them to a pan with the maple syrup, honey, cinnamon and a splash of water. Cook over medium heat until the apples become soft, sticky and glossy. You want them jammy.
4. Cookie time.
Shape your dough into little balls and place them on a lined baking tray and bake at 180°C / 350°F for 12–15 minutes, until the edges are lightly golden.
5. The little apple-pie moment.
As soon as the cookies come out of the oven, gently press an indent into the center of each one, don’t wait for them to cool -they’re much easier to shape while they’re still warm-. Fill each little cookie with your cinnamon apple mixture.
6. Let them cool.
Let them cool completely before eating.

P.S. Serve them with tea or coffee, preferably while wearing something soft and pretending you have nowhere to be.
And if you’re feeling romantic, dust the tops with a tiny bit of cinnamon before serving.
